docs(pdf): the ats mode checks ATS parsing in two stages, and a clean score covers only one

Documents what career-ops-hq/career-ops#4764 shipped (merged as 42eb912): the ats mode now has two stages, a payload stage (ats-payload.mjs) before the HTML is built and the existing score (verify-ats.mjs) after it. Nothing on the site mentioned either script.

What changes

One new section, "Check how an ATS will read it", on the pdf mode page, before "Gotchas". English, Spanish, French and German.

Scope

• No standalone ats mode page. The site says "14 modes" in many places across four locales, so the mode is documented inside the pdf page rather than as a fifteenth.
• pdf --ats is not documented here. career-ops-hq/career-ops#4909 merged shortly before #4764 and runs the same payload fold as an opt-in pdf step. That belongs in its own change. The wording here stays true with it: "neither one runs during a plain /career-ops pdf".
• The 97/100 figure is the one modes/ats.md states for a test CV. It is worded as a test result, not a guarantee.
