Raised as this verison of tika has updated dependencies that resolve a bunch of transitive CVEs. Bumping jsoup to be safe as we've had issues in past when we've updated some of the spring ai document reading dependency libs out of sync with each other. |

Updating tika and jsoup to versions used by latest tika release.
Please consider back port to 1.1.x
