Upgrading Poetry broke pypy3.11 workflows.

NumPy support for pypy3.12 is not merged yet: numpy/numpy#32332

Tests run on PyPy.

Current Behavior

Tests disabled on PyPy for now.

Possible Solution

Wait until NumPy support for PyPy 3.12 is merged, then update NumPy and re-enable PyPy.
