CI: pin PrestaShop 9.1.5 and add 9.2.x to the PHPStan matrix - #247

9.1.5 is the last release of the 9.1 line, the 9.1.x branch having been deleted from the core once it shipped. 9.2.x joins the matrix so this module has the same coverage as the rest of the Epic.

The neon rename is a
git mv, sincephpstan-configinterpolatesmatrix.presta_version.phpstan-9.2.x.neonis a copy of the existing 9.1.5 neon, which is byte-identical tophpstan-develop.neon, so the same suppressions apply and nothing new is silenced.
