creating content encoded with ffmpeg

Great project with a funny implementation - nice to see.
Can you please give some additional information how to create the right encoded video files with ffmpeg ? Parameters ´+ how to offer stream? Would it also possible to offer it with gstreamer on a Linux box ? Thx & BR
