ci: add Python 3.14 to test matrix and sync version metadata

- Add '3.14' to the test matrices in ci.yml and release.yml
- Update classifiers.txt to list 3.10-3.14 (drop stale 3.5-3.7)
- Update Python version range in docs/release.rst
