`tbl_rmpt` make it more general

Suggestion: use simulated dataset instead of pharmaverseadam, potentially as export. Then modify the text so that it's not just on exposure time.

@Melkiades If we want to make it more general, maybe we should call it a different name, and use simulated data as we discussed. Since the internal templates are already using this function (and will most likely receive feedback from users), how about we do the following?

• make a new function with a more general name and use-case (something like tbl_count_person_time)
• replace the existing tbl_rmpt after the feedback. Once stable, deprecate tbl_rmpt
