[Homebrew] A sioyek-git or sioyek-dev version that tracks the development branch

Would folks appreciate a Homebrew cask that tracks the development branch of this repo and builds from source? Currently we only have the 2022 release.

Yes, we have an auto-updating nixpkg that builds on every commit, so Homebrew users would probably appreciate something similar.

Casks only install prebuilt binaries, and the existing sioyek cask has been disabled since Sept 1 because the 2.0.0 build fails Gatekeeper. Homebrew core won't take this either, since it doesn't accept formulae that only track a branch.

We could maybe do a tap? A repo like ahrm/homebrew-sioyek with a formula that builds from source. Building locally also avoids the Gatekeeper problem.

Should the tap live under ahrm/ (official) or under a contributor's account?
