refactor: remove npm workspaces, make each SDK standalone

- Remove root package.json and node_modules
- Each SDK is now fully independent with its own dependencies
- Contributors can clone and cd into their SDK of choice
- Updated CI to use working-directory instead of workspace commands
- Added typescript as dev dependency to js-sdk
- Updated .gitignore for Java and Ruby artifacts
